200ml newly squeezed lemon juice
500g fine sugar

For the Drink (makes 850ml, serving 10)

Instructions

Making the Cordial: Put all the ingredients into a pot, bring to a simmer, stirring until the sugar dissolves. After that, remove from the heat allowing it to cool down entirely. Transfer into a sealable bottle, close it and store in the refrigerator, it will last for up to four weeks.

Preparing the Batch Mix: Pour the specified liquids in a sizeable container, leave to sit for one hour, then filter it preferably using a fine cloth, making it perfectly clear.

When ready to serve: Add 85ml of your cocktail base to a cocktail shaker containing ice, gently stirring gently for about 60 seconds to cool it down. Filter into a frosted cocktail glass or similar, top with a few cranberries and complete it with a brief mist with the mandarin essence over the drink.
